Sooo Easy Macaroons.....

This recipes is soooo easy to make and is sooo delicious!

You need

1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1 bag (14 oz) flaked coconut
1/4 cup milk
1 can (14 oz) sweetened condensed milk (not evaporated)

1. In large bowl, stir together cookie mix and coconut. Stir in milk and sweetened condensed milk until well blended. Cover; refrigerate 2 hours.

2. Heat oven to 375°F. Line cookie sheets with cooking parchment paper or use ungreased cookie sheets. Using 1-tablespoon-size cookie scoop, scoop dough onto cookie sheets 2 inches apart.

3. Bake 12 to 14 minutes or until edges are light golden brown. Cool 5 minutes; remove from cookie sheets to cooling racks. Cool completely.


To make them even more special....

I melted down some chocolate and just rolled the sides to coat the cookies.....

Phenomenal....

Meatloaf

I grew up with out of sight home cooking. My nana was an awesome cook, my mom was an awesome cook and so I got use to good wholesome home cooking. Nana cooked most of the meals for grandpa and thier 2 girls. Every so often though gramps would cook meatloaf. And it was always phenominal. Even today we refer to our Meatloaf recipe as "Grandpa's Meatloaf". And i always think of him when I make it.

Mile High Apple Pie

I love to make apple pies. Not my favorite pie to eat but for some reason I love to make them. I dont even think its that great but they are fun to make.

Not sure what to call it.....

So its part pie/part cake.



I made this for a buddy's bday. Made in a springform pan. Line the bottom with crushed oreo cookies. Slice up some swiss rolls and line them along the sides of the pan. Then add a layer of chocolate fudge pudding. Then a layer of chocolate pudding with cool whip mixed in. Then pile more cool whip on top. End it with more crushed cookies on top.



Nolan was intrigued....

Monday: Chicken Ranch Casserole
Tuesday: Herb Shrimp Pasta
Wednesday: Fend (I have enrichment)
Thursday: Fend (I have to work)
Friday: Fend (Kevin has to work)
Saturday: Chicken Fajitas
Sunday: Mom and Dads (fathers day)

Not too many ideas for this week, sorry!

Chicken stuffing Casserole.

This is one of my favorite recipes. I usually dont measure. You can easily mix around the measure ments to your liking.

You need:

1 1/2 cups boiling water
4 tbsp. butter OR margarine
4 cups Herb Seasoned Stuffing (2 small pack or one large)
2 cup cooked broccoli cuts (can use frozen peas and carrots, for something new)
2 cup cubed cooked turkey or chicken
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken (Regular or 98% Fat Free)
1/2 cup milk
1 cup shredded Cheddar cheese


Directions:

MIX water and butter. Add stuffing. Mix lightly.

SPOON into 2-qt. shallow baking dish. Top with broccoli and turkey.

MIX soup, milk and 1/2 cup cheese and pour over all. Sprinkle with remaining cheese.

BAKE at 350°F. for 30 min. or until hot.


I usually boil the chicken on the stove in a mixture of Chicken broth and water for extra flavor. And of course it is served with a side of Cranberry Sauce!

Tuesday: BBQ Steak (the only way to go)
Wednesday: Spam and Beans (not my fav but it was Kevins bday so his choice)
Thursday: I work, its fend
Friday: Josie's birthday, went to parents house, had hot dogs and nachos
Saturday: Take out from Chili's
Sunday: Mom and dads - Montery Chicken

This week is kind of boring, Busy Busy week so not too much to share....

Sunday: My Fav: Country Fried Steak, Smashed taters and biscuits all smothered in country gravy. Oh, with some squash!
Monday: Memorial Day Ate at the Parents. Had friends from back in the day visit. Good BBQ!
Tuesday (my Bday): Its Fend, I have to work from 2-8pm :(
Wednesday: Going to Sea World, eating out
Thursday: Again Fend, have to work 3-8pm
Friday: Orion's bday party. Eating Pizza!
Saturday: Philly Cheese Steak Sandwiches!

Dinner for the week....

So every Friday I make a menu for the week. It helps with the grochery shopping so we can get it done in one day. Here is what is on tap for this week:

Friday: Spaghetti, Squash and Garlic Bread
Saturday: Sloppy Joes/Hamburgers and corn on the cob(Kevin doesnt like Sloppy Joes)
Sunday: Hot dogs and potatoe salad
Monday: Chicken Stuffing Cassorole with Broccolli
Tuesday: Garlic Shrimp Pastas with herb sauce
Wednesday: Meatloaf, whipped potatoes with country gravy and sweet rolls.
Thursday: Chicken Burritos, Mexi beans

Sometimes it changes. If anyone wants recipes, Ill try to post, just ask.

Beef Wellington

I made an attempt at making Beef Wellington. I see it made all the time on Hell's Kitchen so it made me want to try it. I need to perfect my form but it came out ok.





I did follow it up with Nana's famous homemade chocolate sauce and vanilla ice cream. Family recipe and sooooo good!
