Wednesday: Fend (I have enrichment)
Thursday: Fend (I have to work)
Friday: Fend (Kevin has to work)
Saturday: Chicken Fajitas
Sunday: Mom and Dads (fathers day)
Not too many ideas for this week, sorry!

Chicken stuffing Casserole.
This is one of my favorite recipes. I usually dont measure. You can easily mix around the measure ments to your liking.
You need:
1 1/2 cups boiling water
4 tbsp. butter OR margarine
4 cups Herb Seasoned Stuffing (2 small pack or one large)
2 cup cooked broccoli cuts (can use frozen peas and carrots, for something new)
2 cup cubed cooked turkey or chicken
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken (Regular or 98% Fat Free)
1/2 cup milk
1 cup shredded Cheddar cheese
Directions:
MIX water and butter. Add stuffing. Mix lightly.
SPOON into 2-qt. shallow baking dish. Top with broccoli and turkey.
MIX soup, milk and 1/2 cup cheese and pour over all. Sprinkle with remaining cheese.
BAKE at 350°F. for 30 min. or until hot.
I usually boil the chicken on the stove in a mixture of Chicken broth and water for extra flavor. And of course it is served with a side of Cranberry Sauce!

Wednesday: Spam and Beans (not my fav but it was Kevins bday so his choice)

Friday: Josie's birthday, went to parents house, had hot dogs and nachos
Saturday: Take out from Chili's
Sunday: Mom and dads - Montery Chicken
